What do u you do when you have leftover pie filling but no more puff pastry? Or when you’re on a student budget or too lazy to roll out a block of store-bought puff? You use a cheat method!
The cheat method includes wrapping the leftover filling on a frozen parata sheet and baking / airfrying for 10-12 mins at 180ºC and ta-da, you’ve got pastries / pies that are amazing for any quick meal. Just remember to let the frozen paratas thaw for about 1-2 mins so it becomes easier to fold over. But don’t keep out for too long as it will turn too sticky to work with.
The best part is they freeze amazingly well and I always make extra and wrap in the same sheets that the paratas are wrapped and chuck them back to the freezer for quick meals. When you are ready to eat them, simply transfer them straight from freezer to oven/airfryer and bake (yup, no thawing required!)
My favourite fillings are seenisambol (caramelised onions) and egg or even tuna. Sausage, minced meat mixtures all works really great. I also like making different shapes out of them, the easiest would be to fold in half and leave some fork marks as you would to calzones or Sri Lankan patties.
