Dairy Free ‘Ice Cream’

Smoothie 3My better half is currently following a strict health regime – from cycling to work almost every morning to completely cutting down on sugar, he’s even agreed to take salads to work. While it is really a very good thing, this means that I lost my partner in crime to gorge on tubs of ice creams every once in awhile cos where’s the fun in eating sinful things alone? So the foodie in me was on the look out for healthier alternatives for ice cream and stumbled upon a whole load of resources that suggested using frozen bananas and fruits to create the exact same consistency as ice cream – but with zero dairy and loads of healthy fruits.

There’s really no recipe but to rather chop and freeze bananas together with whatever other fruits you like overnight and blend them with a little bit of water. I’ve included some step by step photos to show how easy and fuss free it really is!

I chopped up two bananas, a large ripe mango and threw in a few raspberries and blueberries into a zip lock and froze them overnight. If you can’t do overnight, about 2 hours would be good. If you freeze for longer, just remember to let the fruits to thaw for about 20 mins so it’s easier to blitz them in the blender.

The frozen fruits would look something like this after 8 hours or so in the freezer.

I added about half a cup of water into the blender along with the fruits to make it easier to blitz. Smoothie

Switch off the blender occasionally and give the mixture a little stir to ensure everything gets incorporated well. You could also add in honey if you feel your fruits are not sweet enough. But this was perfect for our liking.

You could add in more water or even yoghurt or milk if you like it to be a smoothie or leave it as it is for a more ice-creamy consistency which could be eaten as a desert.

Hope this yummy treat would help cool those warm summer days ahead without the added guilt.
